It’s not a secret.
I’m addicted to Tim Hortons.
If it weren’t for their phenomenally smooth {and cheap} coffee…I’d be hooked simply because of their cranberry blueberry bran muffins.
They are out of this world tasty, and the fact that they’re way healthier than a Big Mac really doesn’t help my spontaneous ‘I see a TiHo’s…stop now or I might just die!” addiction. It just makes me want them more.
And we really haven’t got a pretty little spot for Tim Horton’s in our budget.
My husband is hooked.
Even our 3 year old delightedly bellows “Timmies!” from the backseat of the van whenever we drive past one.
No, she can’t read. She just knows what the home of a really great muffin looks like. They live there, and she would too if she could.
She can’t.
So I went in search of the perfect muffin recipe {www.allrecipes.com rocks my world – and makes my kitchen a much less boring place – by the way} and I am thrilled to announce, I found it. And I am just so kind and loving that I will share it with you.
I’m sweet like that {ahem}.
{Did I mention I love muffins?}
Introducing…{drum roll please}…
Morning Glory Muffins
Ingredients:
- 1 cup of whole wheat flour
- 1/2 cup of all purpose flour
- 1 cup of old fashioned oats
- 3/4 cup of brown sugar
- 1 tbsp. of wheat bran
- 2 tsp. of baking soda
- 1/4 tsp. of salt
- 1 cup of plain yogurt
- 1 cup of mashed ripe banana {approx. 2}
- 1 large egg
- 3/4 cup of chopped walnuts
- 1 cup of chopped apricots
- 1/2 cup of dried {chopped} pineapple
- 3 tbsp. of flaxseeds
- I added: 1 cup of grated carrot, 1/2 cup of shredded coconut and 1/2 cup of raisins {you could add craisins, almonds, blueberries, cherries, etc.}
These suckers are fool-proof. You stick whatever you love in ‘em…and they just love you right back.
Directions:
- Preheat oven to 350* {or if you’re baking with a toddler…wait until you’re halfway through…everything takes longer with a little one’s “help”}
- Place 18 liners in a muffin pan
- Combine ingredients through salt in a large mixing bowl
- Make a well in the center
- Combine the banana, yogurt and egg
- Add banana combo to flour mixture, stir until just moist
- Fold in nuts, apricots and any other yummy bits you choose to add
- Spoon batter into cups
- Sprinkle with flax seed {I mix some into the batter too}
- Bake for 20 minutes at 350* {or a little longer depending how much you add}
- Remove from pan immediately {unlike photo} and cool on wire rack
As a side note: its quite hard to type with one hand…excuse me…
but as soon as these suckers are out of the oven…
the devouring of deliciousness…must commence.
