We heart smoothies.
Besides the fact that my kids adore them, and they’re super easy to throw together with a toddler…they pack a real nutritional punch!
We will often have smoothies for lunch on hot summer days.
Why ever not? It’s like having lunch and dessert all blended into one.
They’re filling and offer all the protein, vitamins and roughage you could dream of in one pretty {chilly} cup. Add a couple whole-grain crackers on the side and you have a well rounded lunch!
What we toss in our blender:
- about 1 cup of yogurt
- about 1 cup of frozen fruit {the giant bag we buy contains: peaches, pineapple, mango and strawberries}…this way you don’t have to use ice
- 1 banana
- a handful of blueberries
- a dollop of light whipping cream for good measure {or good behavior}
This typically feeds myself and the two kiddos. If hubby is home, we double it. If you have extra…pour it into a popsicle mould and you’ll have a delicious {and nutritious} treat ready in a matter of hours.
Often it’ll be thick enough to eat with a spoon {oooh, ice-cream!}, so just add more yogurt/milk if you prefer a thinner consistency.
Blend away…they’re absolutely scrumptious.
