In need of a quick, healthy {good balance of complex carbs & protein} snack for the whole fam?
Forage no further.
With the refreshing zip of the snipped mint, the sweet juiciness of our favorite strawberries*, and a {hefty} drizzle of our homemade yogurt…this gorgeous spread can be tossed together in a matter of minutes.
Seriously, try the mint. Addictive! You’ll need a 12-step program to help you cope when your garden stops yielding fresh sprigs {which are prolific during the summer and always in need of a little love – for some reason I always forget to use mine and it dies a sad, lonely death}.
*My family adores fresh strawberries and have found nothing beats SAMS {for flavor and cost}. Without fail, every visit involves leaving with {at least} a carton. If you were hoping to see “organic, farmer’s market produce” listed here…too bad.
Cricket also happens to adore fresh mint – right out of the garden {along with basil, cilantro {eck!}, parsley, and the likes. She’s wildly cool like that}. Okay, I’ll stop bragging.
Well, I suppose seeing it’s my blog I don’t actually have to stop…I won’t. So there.
Feeling sassy today, apparently.
Moving right along…
Toss a little more protein {the yogurt provides some} by slicing up some of your very own cheese-sticks.
I’m tempted to laugh out loud in the cheese section whenever I notice the ridiculous cost of individually wrapped string cheese. It’s daylight robbery. Have you actually looked at the total weight of the cheese you’re buying? It’s piddly.
But there’s help.
Instead, try this:
We buy the mother of all cheese, monster 5 pounder of mozzarella at SAMS for 10 smackaroos {no…they’re not paying me to rave about them. Unfortunately}. We freeze half the block and then slice up part of the remaining half {we leave some in block form for sandwiches and the out-of-this-world delicious pizza we make {dough happens to be from…you guess it, SAMS. Wow, and I haven’t even started spouting forth my adoration for their boneless, skinless chicken breasts. Love!}.
Along with being considerably more affordable, it’s also way yummier than store bought string cheese: tender and flavorful rather than rubbery and bland.
Oh, and my kids actually eat it, which is always a plus. Cricket always asks for more, which is in stark contrast to the usually returned, half-eaten stick of stringiness.
{If you deal with half eaten sticks of cheese…start by cutting your sticks smaller. That’s part of the benefit of slicing your own}.
Come to think of it, SAMS should totally pay me for this post.
Or at least give me some free cheese.
