Remember this farewell to the conventional birthday cake {if, of course, you call sticking a little doll in a dress-shaped cake “conventional”} while also offering a sweet teaser as to what the future of our kid’s birthday cakes might hold {pun totally intended}…?
Well, it’s official.
I have a new addiction: making cake pops.
Now it’s your turn to learn how to make this sorry little sheet cake…
{temporarily} look like this…
and finally, in a grand display of deliciousness, look like these:
Sweet. Pretty. Moist. Rich. Unique.
And the perfect serving size {that is…if you stop at one}.
And you’ll be surprised by how simple they are to make.
Ingredients are bolded…
Here’s the Scoop:

Bake your favorite cake mix {following the directions on the box}

Once cooled, crumble into a large bowl.

Mix in about 2/3 of a can of cream cheese frosting {hands are best}

Roll them into quarter-sized balls and place on a wax paper covered cookie sheet.
- Melt your a small portion of your melting chocolate/candy coating {30 second intervals, stirring in between, until nice and runny}
- Dip the tips of the lollipop sticks {available at Hobby Lobby} into a little chocolate and insert into cake balls, just less than half way.

Chill in the freezer until cold and firm {this will assist in them not jumping off the stick into your chocolate pool…always nice}.

Melt your chocolate/candy coating {again, warm and runny is the way to go}, quickly and as neatly as possible, dip and swirl each cake pop into the coating, tapping gently on the side of the bowl to remove excess.

Place in a styrofoam block {cover it in saran wrap if you’d like to reuse it} for drying.

If you want to add sprinkles, do it quickly while they’re still wet. Once dry/set…you can decorate them in a million different ways: by ‘adhering’ little candies with melting chocolate, scribbling on them with edible ink markers, decorating them with a additional chocolate {try a different color} piped from a ziplock baggie {think: swirls, flowers}, or turn them into little creatures {see below}. The options are endless.
