Hello. My name is Joy. And I’m a chocoholic.
It would seem chocolate {and most other sugary delights} are like crack to my no-carb-left-behind body {as clearly evidenced by my 40 day adventure here}.
In my {utterly futile} efforts to keep my eating under control…I occasionally make stuff like this…
{And look at that: it contains chocolate. Shocker.}
But, it’s in moderation. And it’s loaded with good stuff, so hush your mouth. {excuse the nastiness…I’m a little touchy about my hopeless need for sugar}.
Here’s the scoop:
Trail Mix Bars

1/4 cup of brown sugar

1/2 cup of honey {or go halvies with maple syrup}

3 tbl. of {natural} peanut butter

1 egg white
-
2 tbl. of vegetable oil

1 tsp. of vanilla extract

1 cup of whole wheat flour
-
1/2 tsp. of baking soda
-
1/2 tsp. of cinnamon
-
1/4 tsp. of all-spice
-
2 cups of old fashioned oats
-
1 1/2 cups of crisp rice cereal
-
1/3 cup of chocolate chips {semi-sweet, white or butterscotch}

1/2 cup of raisins or craisins
-
1/2 cup of chopped nuts {almonds, walnuts or peanuts}

flax seeds
Mix first 6 ingredients {through vanilla} together, and the following 4 {dry ingredients} together, in separate bowls.
Combine, mix well.
Stir in the oats, cereal, chocolate chips {num num num}, raisins and nuts.
Press into a greased 9×13 pan.
Sprinkle with flax seeds {and colorful sprinkles, if you’re feeling sassy}
Bake at 350* for 15-18 minutes, or until golden brown.
Cool on a wire rack, and cut into bars when cool.
Munch while working. Or driving. Or exercising. Or sleeping.
{well, nix that last one…crumbs in your bed are dreadful}
{feel free to not notice that I forgot the flax seeds…but the sprinkles made it.
It’s the weirdest thing…}
