We try not to use much white sugar {or other overly processed, refined “foods”} and are always looking for fun ways of making favorite recipes a little healthier {like using our CSY instead of a wide variety of less healthy liquids for baking}.
Today we took on No Bake Cookies {hoping and praying for considerably less revolting results than these}.
Check these babies out; alterations have a “*”:
Ingredients:
- 1 cup of Honey*
- 3 tbs. of unsweetened cocoa powder
- 1/2 cup of Butter
- 1/4 cup of Milk*
- 1 pinch of Salt
- 3 cups of old fashioned Oats*
- 1/2 cup of natural peanut butter*
Directions:
- In a saucepan, bring honey, cocoa, butter, milk and salt to a rapid boil, boil for 1 minute
- Add oats, peanut butter {vanilla, if you choose – I didn’t have any}; mix well
- Drop by spoonfuls onto waxed paper and let cool.
- Enjoy!
*alterations:
- 1 cup of honey vs. 2 cups of white sugar
- 1/4 cup of milk vs. 1/2 cup of milk {halved because of honey substitute}
- old fashioned oats vs. quick cooking oats – chewier than its more finely-processed sibling
- we prefer natural peanut butter over the other {“choosy moms…”} stuff
They were delish, albeit a little goopy. The honey added a nice, not overly sweet, flavor. Today was warm {and we’re too cheap to put the AC on}, so we popped these babies into the fridge to help them set.
**Take 2 will involve cutting back a little more on the milk {3 tbs. instead, or maybe use yogurt?} and adding a wee bit more cocoa.
