The air is crisp, the leaves are every shade of awesome, and the sun continues to warmly kiss our cheeks.
Autumn glamour meets Indian Summer simplicity.

What’s a girl to cook when citrus hues are the color of choice, clean and crisp is the mode, and the gloriously stubborn summer sun refuses to fully release her grasp?
Why, Broiled Citrus Tilapia, of course.
Toss in some wild rice, a simple spinach-mandarin salad and maple-glazed carrots and you’ve got yourself a harvest-hued feast fit for a Queen!
Ingredients:

1 1/2 pounds of fresh or frozen Tilapia, thawed

Garlic Powder

1/4 cup of melted butter
-
1/4 cup of lemon juice

1/4 cup of soy sauce
-
1 orange, sliced {keep ends}

Paprika
Directions:

Place tilapia fillets in a shallow dish, sprinkle with garlic powder.

Combine melted butter, lemon juice and soy sauce, and pour over tilapia, turning to coat.

Let stand 20 minutes.

Place fish on {foil lined} cookie sheet under broiler, about 4 inches from heat. 4-5 minutes on each side is perfect {or until fish flakes easily}.

Baste fish with remaining marinade on both sides {before and after you ‘flip’}, place orange slice on tilapia for final 4-5 minutes.

Remove from oven. Squeeze remaining orange juice from ends over fish. Sprinkle with paprika.

Serve over rice, couscous or quinoa.
FYI: We buy bags of tilapia when it goes on sale at Meijer for 2/$7 and toss them in our chest freezer, that way we’re well stocked on this delicious omega 3 and 6 rich, lean protein fish. We rarely buy lettuce {it would typically go bad before we used it all}, and have found we prefer using more nutritionally-dense spinach as both a salad base and main entree ingredient.
In other news, the little Bloom Together book club a friend and I started is well under way and tucking nicely into our first book, Momology. Good stuff. It’s not too late to join us! And, if I may say {which, you know…I may}…you won’t want to miss the steamy book we’ve got lined up next, starting in January {oooh la la!}.
The 100 Days to Healthy tab at the right side of my menu bar has been officially – finally – updated. Scroll to the bottom for the latest. I’ve been a hopeless tracker of my progress. Possibly indicative of my complete lack thereof. While I haven’t moved forward since my initial triumphant few weeks…I most certainly haven’t made head way. I need a kick in the rear.
