When flakes of white start to cloak the ground, our breath fogs up the window pane, and the warmth of our bed threatens to hold us hostage until the final thaw of Spring, there’s nothing like a scrumptious, warm breakfast to woo us out from underneath our covers.

Try this deliciously simply, surprisingly decadent…
Baked Oatmeal
Ingredients:

3 cups of old fashioned oats

3/4 cup of brown sugar

2 teaspoon of ground cinnamon

1/4 teaspoon of grated nutmeg
-
1/4 teaspoon of allspice
-
2 teaspoons of baking powder
-
1 teaspoon of salt
-
1 cup of milk
-
1/2 cup of melted butter
-
2 large eggs
-
1 teaspoon of vanilla extract
-
a handful of raisins, dried cranberries or cherries (optional)

chopped nuts, fresh berries, cream/milk for topping
Directions:
- Preheat oven to 350* (with rack in middle)
- In a bowl, whisk together oats, sugar, cinnamon, nutmeg, allspice, baking powder and salt
- In a separate bowl, whisk together the milk, butter, eggs, and vanilla extract.
- Add the wet to the dry and mix well. Fold in dried fruit (coconut, if you’re feeling sassy)
- Pour into lightly greased baking dish (9×13)
- Place in oven and bake for 25-30 minutes, or until firm to the touch
- Remove from oven and spoon into serving bowls.
- Top with fresh fruit, nuts, milk…and promptly devour.
