I’m addicted to granola.
Absolutely. and completely. hooked.
But I’m not a fan of the price.
The solution? I make my own.
And then eat ungodly healthy amounts of it with our homemade yogurt. Bliss!
{Divine} Granola
Ingredients:
-
12 cups of old fashioned oats
-
1 1/2 cups of wheat bran
-
1/2 cup of flax seeds
-
1 cup of sunflower seeds
-
1 cup of finely chopped almonds
-
1 cup of finely chopped pecans
-
1 cup of finely chopped walnuts
-
1 cup of shredded coconut
-
1 1/2 teaspoons of salt
-
1/2 cup of brown sugar
-
1/4 cup of maple syrup
-
3/4 cup of honey
-
1 cup of vegetable/canola oil
-
1 tablespoon of ground cinnamon
-
1 tablespoon of vanilla extract
-
2 cups of raisins, chopped apricots and/or craisins
Directions:
-
Preheat the oven to 325*. Line 2 large baking sheets with parchment paper or aluminum foil.
-
Combine the oats, wheat bran, flax seeds, sunflower seeds, nuts and coconut in a large {preferably, a massive} bowl.
-
Stir together the salt, brown sugar, maple syrup, honey, oil, cinnamon, and vanilla in a saucepan. Bring to the boil over medium heat, then pour over the dry ingredients, stirring well to coat.
-
Spread the mixture out evenly on the baking sheets and bake until crispy and toasted, about 20 minutes. Stir once, halfway through, to ensure even baking.
-
Cool, then stir in the dried fruit, before storing in an airtight container.
-
Serve with yogurt and fresh fruit.
