If you’re a child of the 80’s, you’ll no doubt recall the drool-worthy A.C. Slater from Saved by the Bell.
Well, I sort of had a crush on him when I was an awkward, pubescent adolescent. So, naturally, when I see a little blurb in my Good Housekeeping magazine entitled, “Mario Lopez’s Turkey & Black Bean Burritos”, I just had to give them a whirl.
It helped that I had just purchased ground turkey on sale, and stocked up on beans {so maybe it wasn’t just the reminiscent starry-eyes that caused that recipe to pop off the page}.
Regardless, they’re wicked good…and we ate them 3 times in 1 week. Yes, they’re that good!

Turkey & Black Bean Burritos
Ingredients:

1 tablespoon on olive/canola oil

1 pound of ground turkey breast

1 can of black beans, rinsed and drained

1 cup of finely chopped red, orange or yellow pepper
-
1/2 cup of finely chopped red onion
-
1/4 cup of barbeque sauce
-
4 teaspoons of fresh lime juice
-
1 teaspoon of chili powder
-
1 teaspoon of ground cumin
-
1/4 teaspoon of salt
-
8 (12 inch) flour tortillas

1 cup of mixed greens
-
1/2 cup of shredded cheddar cheese
Directions:

In a large skillet, heat oil on medium until hot. Add turkey and cook for roughly 5 minutes, or until browned, stirring occasionally and breaking up meat.

Add onion and cumin and cook for a couple more minutes.

Add beans, pepper, barbeque sauce, lime juice, chili powder and 1/4 teaspoon of salt; cook mixture 5 to 7 minutes or until turkey is cooked through.

To serve, lay open tortillas on plates, top with greens, turkey mixture and cheese. Work your burrito folding magic and attempt to eat with restraint.
