But you’re going to love this dish. It’s absobloominlutely delicious! And healthy. And sexy.
Besides. I’m breaking out the summer squash this time too, so it’ll rock your palate in green and gold.
Penne, Veggies & Sausage in Garlic Cream Sauce
Ingredients:
- 1 box of whole grain penne pasta
- 5 chicken sausages (I used this, but you can use any other meat you want to toss in)
- salt and pepper to taste
- 1 vidalia or red onion, diced
- 1 large zucchini, chopped
- 1 large summer squash, chopped
- 1 cup of red, yellow or orange bell pepper, diced
- 1 cup of tomatoes, diced
- 4 cloves of garlic, minced
- 1 tablespoon of olive oil
- 1 cup of chicken broth {go ahead…make your own!}
- 1 tablespoon of all purpose flour
- 4 ounces (half a container) of light cream cheese
- 1/4 cup of fresh herbs: parsley, basil, oregano (optional)
- 1/4 cup of grated parmesan cheese (optional)
Directions:
- grill or sauté your sausage/meat until cooked through
- meanwhile, cook your pasta according to package directions; drain and return to covered pot to keep warm.
- In a large skillet, sauté onion, zucchini, summer squash, peppers and garlic in warm oil over medium heat for 5-7 minutes, or until veggies are crisp-tender, stirring occasionally. Season to taste with salt and pepper. Add vegetables to pasta.
- In a small bowl whisk together broth and flour. Add to warm skillet with cream cheese. Whisk until smooth and bubbly. Stir in tomatoes and cook for 1 more minute.
- Add cream sauce and tomatoes to pasta and vegetables, add meat, and toss to coat.
- Serve with fresh herbs and parmesan cheese.
