She introduced me to this fantastic blog, My Rawsome Vegan Life, and while I have no intention of ever going vegan, I do love healthy food AND I struggle to turn down rich, chocolaty goodness…so a combination of the two is pure magic. And this blog? Let’s just say, this girl has got the goods!
Healthy AND magically delicious!
These brownies are ridiculous. I tweaked it slightly from the original by using raw cacao nibs and cocoa powder, adding a little extra coffee and about a 1/4 cup of unsweetened (finely) shredded coconut, then sprinkling them with more coconut, chia seeds and roasted, salted pepitas.
Yum, people…YUM!
Raw Fudge Brownies

1 cup of old fashioned oats

1 cup of cashews

2 1/2 cups of dates

1/3 cup of cacao nibs

1/4 cup of cocoa powder

1/4 cup of shredded, unsweetened coconut

1 tablespoon of melted coconut oil

3 tablespoons of ground coffee beans

pinch of salt
Toss everything into your food processor and simply process it until it’s all broken down and starts to stick together. To test, press some together with your fingers and see if it holds or crumbles. If it holds – press it into a lined baking pan, but if it crumbles, add a few more dates and process it until it sticks together.
Chill, cut & devour!
